Quinoa salad

Ingredients
Cucumber (with peel), .5 cucumber Garlic, 2 cloves, mincedWhole Grain Quinoa, 0.75 cup 2-3 Italian (roma) tomatoes, choppedCelery, raw, 2 stalk, medium sliced or diced 15 oz. can black beans, drained and rinsedLower sodium Soy Sauce, 2 tbspOlive Oil, .125 cup Carrots, raw, 1 medium sliced thinFresh lemon Juice, .5 lemon yieldsCrumbled feta cheese to taste
Directions
Cook quinoa (preferably with chicken or veggie stock) as directed and allow to cool.
Mix all ingredients together in a medium bowl and enjoy! Feta cheese is not calculated in nutrition facts
