1234 HCG Tomato Basil Soup

2 Cups chicken or vegetable broth2 Cups chopped fresh tomatoes3 ounces of tomato paste4-6 sliced leaves of fresh basil1-2 cloves garlic crushed and minced2 T chopped onion1 tps garlic powder1/4 tps oreganopinch of marjoramSalt and Pepper to taste
1. Puree all ingredients in a food processor or blender.
2. Pour into a saucepan and heat to a boil. Reduce heat and simmer for 20 to 30 minutes.
3. Serve hot, garnish with fresh basil leaves or parsley.
Serving Size: Makes 2 servings (1 vegetable).

This recipe was fabulous! I used a 10 oz container of grape tomatoes, which I roasted in the oven (425 degrees for about 30 minutes). I put the tomatoes, broth, and basil in a pot and boiled it for about 30 minutes to thicken. Then I used a stick blender to smooth. It was delicious! - 3/9/14
