Ingredients
Brown Rice Vermicelli, 250 gramsNutrimax Beef Soup Base, 3 tsp Homemade Vegetable Stock, 6 cupWater, tap, 3 cupsOlive Oil, Extra Virgin, 1/3 tbspGarlic, 2 clove mincedGinger Root, 1 tsp gratedCinnamon, ground, .25 tsp Coriander seed ground, 1 tsp Soy sauce to tasteFirm Tofu, 1 package, cubedEdamame, shelled, fresh, 1 cupBok Choy, raw-shredded, 2 cupToppings2 plum tomatoes, choppedLimes, 2 fruit, sliced in wedgesCilantro, raw, 6 tbsp choppedBasil, 6 tbsp choppedOnions, raw, 6 tbsp choppedPea Shoots, raw, 2 oz
Directions
Cook vermicelli in boiling water. Stir until broken apart, drain and rinse in cold water.

Saute garlic in olive oil, add ginger and then add stock. Add ground coriander and cinnamon. Add soy sauce to taste.

Put tofu and bok choy into broth to warm up. Add rice noodles back into broth and heat through. Serve in bowls and add toppings.
