Glazed Spicy Sweet Plantains

Ingredients
~ 2 tbsp butter melted (I used Earth Balance Vegan spread)~ 2 tbsp honey~ 1 tbsp fresh lime juice~ 1 tsp ground allspice~ 1 tsp grond cinnamon~ 2 plantains (used yellow/black ones)Salt and freshly ground pepper to tasteThyme sprigs for garnish (optional)
Directions
1. Preheat the oven to 400 F. Coat a large baking dish or a roasting pan with oil (I used baking spray)

2. In a large boal, stir the butter, honey, lime juice, allspice and cinnamon together until blended. Add the plantains slices and toss to coat. Arrange the slices in a single layer in the prepared dish or pan. Season with salt and pepper.

3. Bake the sweet potatoes for 25 minutes, or until tender and slightly carmelized. Transfer to a bowl and garnish with thyme sprigs, if you like.
