Creamy Lemon Chive Dressing

2 tbsp. freshly squeezed lemon juice1/2 tsp. fine sea salt1 cup half and half or light cream1/3 cup finely minced fresh chives
In a small jar, combine the lemon juice and the salt. Cover and shake to dissolve the salt. Add the half and half or light cream and the chives. Shake to blend. Taste for seasoning. Store, covered and refrigerated, for up to one week. Shake to blend again before using.
Serving Size: makes 1 1/4 cups, or 9 - 2 tbsp. servings
