Thai curry pork with tomatoes (nahm prik ohng)

Ingredients
2 Tbsp oil2 Tbsp garlic3 Tbsp shallots1 Tbsp red curry paste1/2 lb ground pork (extra-lean preferred)3 medium tomatoes3 Tbsp fish sauce1 Tbsp brown sugar, packed1/2 c water
Directions
Heat oil in wok. Add garlic & shallots, saute a minute or so, then add red curry paste and saute another minute. Mix in pork, then add remaining ingredients.
Boil on low for 7 minutes.
I like to serve on rice with cucumbers.
