Bittman's Ginger Fried Rice

Ingredients
1/2 C peanut oil2 T minced garlic2 T minced gingerSalt2 C thinly sliced leeks, white & light green parts only, rinsed and dried4 C day-old cooked rice, preferably jasmine @ room temperature4 large eggs2 t sesame oil4 t soy sauce
Directions
1. In large skillet, heat 1/4 C oil over medium heat. Add garlic & ginger and cook stirring occasionally until crisp & brown. With slotted spoon, transfer to paper towel and salt lightly.
2. Reduce heat to medium-low, add 2 T oil and leeks, cook about 10 minutes, stirring occasionally until very tender but not brown. Season lightly with salt.
3. Raise heat to medium and add rice. Cook, stirring well, until heated through. Salt.
4. Fry eggs, sunny side up.
5. Put rice in bowl, egg on top, crispy garlic & ginger. Top each egg with 1/2 t sesame oil and 1 t soy sauce.
