Pop Pop's Manhattan Clam Chowder

Ingredients
1/2 lb. lean salt pork- dice1 qt canned tomatoes--rough chop1 stalk celery-chopped4 large leeks-clean well & slice4 large diced carrots4 large diced potatoes2 dozen chowder clams (or canned if unavailable)1 bunch parsely1 tsp thymesalt & pepper to taste
Directions
Dice & Fry salt pork in large kettle, drain off as much fat as you wish. Add canned tomatoes (with liquid from can). Add 4 qts water. Add carrots, leeks, celery and parsely. Let mixture simmer for 2 hrs. Take 2 dozen chowder clams & put through grinder. Add the JUICE of the clams to the mix. Approx 30 mins before carrots are med soft, add chopped clams & diced potatoes. Cook until potatoes are done, Add thyme, salt & pepper
