Italian Turkey Sausage Stir Fry

Honeysuckle White Mild Italian Sausage from Turkey, 16 ozOlive Oil, 2 tbspPeppers, sweet, red, fresh, 1 cup, choppedYellow Peppers (bell peppers), 1 pepper, large (3-3/4" long, 3" dia)Garlic, 3 tspScallions, raw, 4 medium (4-1/8" long)Soy Sauce, 3 tbspWhite Rice, long grain, 2 cupPotato, raw, 2 medium (2-1/4" to 3-1/4" dia.)
Chop peppers
Dice scallions
Chop potatoes into little bits (once you've cut them up, put them in a glass bowl and soften them in the microwave for a few minutes with a plastic wrap cover to keep in steam/heat)
If you don't have a jar of minced/chopped garlic then mince chop some fresh
Heat the wok on Med to Med-Hi heat. Add oil.
Break up your thawed turkey sausage and mix in a bowl with the softened potatoes, garlic and peppers. In the wok, add the scallions and sauté for a bit before adding your mixture. Cook until meat is completely cooked through and veggies are softened. If you have mung beans, add them near the end so they get softened up a bit.
Boil rice per usual means; adding the soy sauce to the water before adding the rice (for flavor/color).
