Enchiladas

Ingredients
1lb Ground Turkey, lean1 c, chopped onion1-15oz can Tomato Sauce1-16 oz can petite diced tomatoes2 cloves garlic1stp Black Pepper2 tsp Cumin2 Tbs Honey2 cups Cheddar Cheese Reduced Fat8 oz Light Sour Cream10-8" Flour Tortillas
Directions
1. Brown onion and Turkey

2. In separate bowl mix tomato sauce, tomatoes, garlic, pepper, cumin and honey.

3. Set aside 1 1/2 cups of sauce

4. Add remaining sauce to meat- simmer 20 minutes.

5. Microwave tortillas 30 seconds with moist paper towel in between shells.

6. Scoop meat mixture into shell & sprinkle with cheese.

7. Roll and place end down into greased 9x13 pan

8. Mix remaining 1 1/2 cup sauce with sour cream. Pour over tortillas.

9. Sprinkle with remaining cheese

10. Bake 375 for 25 minutes
