Slim Potato Soup

Ingredients
-12 medium potatos, peeled and cubed- 2 cans fat free evaporated milk- 4 slices of thick cut ham, cubed- just enough water to cover the potatos in the pan for boiling-1 TBS of parsley- garlic powder (to taste)- salt (to taste)- pepper (to taste)- 1 medium yellow onion, chopped-1 TBS light butter- 1 cup of instant potatoes
Directions
-Peel and cube potatos, put in pot
-cover potatos with water and being to boil
meanwhile:
-chop onion and place in pan with butter on medium heat, let them carmelize.
-chop ham into bite sized chunks and put to the side
-once potatoes are almost soft add:
-evaporated milk
-onions
-ham
-seasonings (to taste)
-then thicken with instant potatoes to your likeing.
