Cajun chicken breast with white rice

Ingredients
1 1/2 cup white rice3 cups water2 lbs chicken breast (boneless, skinless) diced1 cup celery (diced)1 cup onion (diced)1/2 cup green bell pepper (diced)2 T oil (veg)1 t garlic salt2 t cajun seasoning
Directions
Cook rice in boiling water for 20 minutes, on low heat in 2Q pan. (covered)

Dice chicken and season with part of garlic salt. Heat skillet, add oil and then chicken. Cook until almost done, then add celery, onion and bell pepper. Cook about 5 to 8 minutes until done. Add cooked rice and remaining seasonings. mix well and serve.
