Bacon Explosion

Ingredients
*Bacon - Kirkland Signature Bacon (28 slices) *Italian Sausage, pork, 5 link *Kraft Deli Select Pepper Jack Natural, 4 Slices *Bayou Cajun Rub, 1 tsp
Directions
Pan-fry 14 slices of bacon. Weave 14 slices of bacon into a square grid. Sprinkle with rub. Remove sausage from casing (or use equiv. bulk sausage) and spread evenly over weave, leaving 1/2" back from edge clear. Place cheese slices in center. Crumble pan-fried bacon and sprinkle over other ingredients. Roll up ingredients into a log. Place on a smoker at ~350*F for about 2.5 hours or until internal temp is 160*F. Optionally place in broiler for a few minutes to further crisp outer bacon.
