Buffalo Chicken Nuggets

1 cup Fiber One Cereal, crushed1 tsp black pepper1 tsp garlic powder1 tsp onion powder1 tsp ground thyme1 cup Hidden Valley fat free ranch dressing4 tbsp Franks Original Red Hot Sauce1 lb boneless, skinless chicken breast
1. Preheat oven to 375 degrees. Using a blender or food processor, grind Fiber One to a breadcrumb-like consistency. Season the crumbs with salt, pepper, onion powder, thyme, and garlic powder, and mix well. Place crumbs in one small dish and egg substitute in another. Mix Ranch and Franks together in bowl.
2. Coat each chicken piece on both sides – first with Ranch/Franks mixture, and then with seasoned crumbs. Place chicken on a baking sheet sprayed with nonstick spray. Top chicken with a light mist of nonstick spray.
3. Bake in the oven for 7 minutes. Flip the chicken over, and add another light mist of nonstick spray. Cook for an additional 7-9 minutes, until chicken is fully cooked and coating looks crispy.
