1 pound lean ground beefSalt & freshly ground pepper, to taste1 1/2 tablespoons canola oil, divided1 red onion, chopped1 green bell pepper, seeded and chopped2-3 small red potatoes, chopped1/2 Cup of Canned Corn6 cloves garlic, minced1-2 jalapeño peppers, finely chopped with seeds2 tablespoons ground cumin2 tablespoons chili powder1 tablespoon paprika2 28-ounce can diced tomatoes3 19-ounce cans dark kidney beans, rinsed
Add ½ tbs of canola oil to a hot skillet along with 3 minced garlic cloves, add ground meat cook till light brown. Place in crock pot, add red onion, remain canola oil, remain garlic cloves, green pepper, jalapenos, potatoes, kidney beans and spices. Stir ingredients together. Top with canned diced tomatoes. Cook for about 4-5 hours
