Orange Balsamic Glazed Chicken

1 tbsp olive oil1 chicken breast half, cut into 2 cutletssalt and pepper1 tsp poultry seasoning1 spring of fresh rosemary, leaves removed, and chopped2 1/2 tbsp orange marmalade2 tbsp balsamic vinegar1/4 cup chicken stock1 scallions, finely chopped (use white and green parts)
1. Heat olive oil over medium heat in a large skillet
2. season the chicken with salt, pepper, and poultry seasoning
3. Add the chicken to the pan and brown for 5 minutes. Turn the chicken, season with rosemary and brown for another 5 minutes.
4. Combine the marmalade, vinegar, and chicken stock and then pour over chicken. Let the sauce thicken slightly (about 2-3 minutes).
5. Add the scallions during the last minute of cooking time.
Serve with broccoli and salad
