Ingredients
potatoesEgg, waterflourButter
Directions
Wash, peel, and cut the potatoes into aprox 1" cubes. Place them in a large pot with plenty of water. Mix All of the remaining ingredients together. You may need to add a small amount of water to make a nice workable noodle dough. Do NOT over-work the dough, the dumplings will come out too chewy. Break up the dough into 1/2 to 1": balls. Bring the potato water to a boil. When potatoes are about 1/2 done. place the dumplings into the boiling water a few at a time. When the balls float to the top of the water, cook them for about 5 minutes longer. At that time, the potatoes and dumplings ought to be cooked. The dumplings are done when cooked all the way through, but still have a bit of firmness to them. Drain. Melt butter in a separate dish, then pour over the potatoes and dumplings. Salt and pepper to taste.

(As a side note, we also like to pan fry sliced and quartered Polish Sausages to this dish)

This is the first time I finally found a recipe for this. I remember the way my grandmother use to make this. When the potatoes were almost done she would take them out and fry them with scrambled eggs in them and when the dumplings were done she would mix them in with the potatoes and egg - 4/12/21
