Oat and Raisin Muffins

2 cups quick oats (gluten free)1 cup teff flour1/4 cup raisins1/4 cup ollive oil1/2 cup maple syrup1/2 cup plain no fat yogurt1 tablespoon arrowroot powder1 1/2 tsp. vanilla extract3/4 tsp. cinnamon1/4 tsp. salt
1. Preheat oven to 375 degrees F. Oil a muffin tin or line with muffin liners.
2. Put all of the ingredients in a large bowl. and mix until thoroughly combined. The batter will be thick.
3. Scoop the batter into the prepared muffin tin, filling each cup about two-thirds full.
4. Balke for about 25 minutes, until a toothpick inserted in the center of a muffin comes out clean.
Serving Size: Makes 12 small muffins.
