2 skinless, boneless chicken breasts1/2 cup salsa1/2 cup shredded cheddar cheese (low fat)1/2 clove garlic1/2 pinch salt1/2 pinch ground black pepper1/2 pinch ground cumin
1. Preheat oven to 375 degrees.
2. Heat a greased skillet to medium. Rub chicken pieces with garlic, salt, pepper and cumin and add to hot skillet. Cook until brown on both sides and no longer pink (10-15 minutes).
3. Transfer meat to a baking or casserole dish, top with salsa and cheese and back at 375 degrees for 15-20 minutes. Serve over rice or noodles.
