Roast chicken and potatoes

Ingredients
4 Chicken thighs2 large Onionsjuice of 1 Lemondash of Saltdash of black Pepper8 medium peeled Potatoes
Directions
Finely chop the onions and add salt and pepper.
Marinate chicken in the mix and cover.
Leave chicken in the mix for at least an hour.
Remove chicken from the mix. Cut potatoes into 1 inch thick slices. Mix potatoes in the marination after chicken is removed.
Put an oven bag in an oven dish. Inside the bag, put the potatoes on the bottom and then the chicken on top. Close the bag.
Bake in a medium heat oven for an hour.
Makes 4 servings. Each serving is one chicken thigh and about 1 cup of potatoes.

    This looks quite easy but based on the cooking method being in the bag, this sounds like BAKED chicken rather than ROASTED chicken - 7/28/09

    This was quite good, especially to be so easy and with simple ingredients. I used chicken tenders and added carrots. I paired it with whole wheat couscous and a salad dressed with olive oil and lemon juice. A very nice meal...easy, inexpensive, tasty and healthy. You can't beat that! - 5/8/09
