Diabetic Cheesecake

Ingredients
4 oz nonfat cream cheese4 oz nonfat sour cream2 large eggs1/8 cup quinoa or other flour3/8 cup fat free milk1 T vanilla extract1.5 T Stevia
Directions
Oven 350 degrees. Mix stevia and cream cheese. Add milk and eggs. Mix in vanilla, flour, and sour cream and mix until smooth. Pour into a 7" square Corning Ware dish. (Spray it first). If you wish you can create a graham cracker crust first from 7 crushed crackers mixed with 1 T melted butter. Bake for 1 hour. Then turn off the oven and leave the cheese cake there for 4 to 6 hours. DON'T SKIP THIS PART. Then refrigerate until serving.
