Cinnamon Sweet Potatoe chickpea salad

1 large sweet potatoe cut in 1/2" cubes1.5 cup of chickpeas 1 small onion, chopped1/2 tsp. cinnamon1/2 tsp. salt1 tbsp. coconut oil
Preheat oven to 425, line a baking sheet with parchment paper or coat with non-stick spray
Cut and peel sweet potatoe in 1/2" cubes
uncooked sweet potatoe, cooked chickpeas, chopped onion, salt, cinnamon, half of the coconut oil to a large bowl and mix throughly.
Spread mixture on baking sheet
Place in oven for 40 minutes
Remove from oven put mixture in bowl add the rest of coconut oil and mix
Serving Size: makes 2 salads
