Fish balls

Ingredients

Approximately 30 oz/850g mixed fish, including some smoked fish (at least 6 oz/170g smoked fish recommended)1.5 cups/275g arborio rice4.5 cups/1L waterDillNam Pla (fish sauce)Pepper
Cook the rice in the water stirring well towards the end so the rice does not stick. The rice should be sticky and mouldable. DO NOT RINSE THE RICE.
Chop up all the fish into small pieces, removing any bones or skin.
Mix the rice and fish together. Add the dill, fish sauce and pepper to taste (salt should not be needed as the fish sauce is salty)
Roll the mix into small balls (a little smaller than a golf ball). There should be enough mix to make approximately 40 balls.
Place in the refrigerator to chill.
To cook, pre-heat the oven to 400F/200C. Bake for 20 mins or until hot through. Serve about 4 each with a big bowl of stir fried vegetables (our favorite to go with these is cabbage and onion stir fried in sesame oil with sesame seeds)
Excess balls can be frozen on a sheet and then transferred to baggies once frozen solid.
To cook from frozen, preheat the oven to 375F/190C and bake for 30-40 min or until hot all the way through.
