Mama Pea's Anytime Cookie

1/4 c. ground flaxseed1/2 c. water1 c. unbleached organic flour1/2 c. organic whole wheat pastry or white whole wheat flour1/2 c. old fashioned oats or oat flour1/2 t. baking soda1/2 t. ground cinnamon1/4 t. ground nutmeg1/4 c. canola oil1/4 c. non-dairy or organic milk1/4 c. unrefined organic sugar1/4 c. unrefined organic brown sugar1/4 c. roughly chopped dried apricots1/4 c. raisins1 t. vanilla extract1/4 c. chopped almonds (or any other nut desired) and/or dark chocolate chips
Preheat oven to 350 degrees.
In a small bowl, combine ground flaxseed with water and set aside. This is the way we make a “flax egg…”
In a large bowl, combine flours, oats, baking soda, spices, chopped dried fruits and chocolate chips or nuts.
To flaxseed/water mixture, add sugar, oil, milk and vanilla. Mix well.
Add wet ingredients to dry ingredients, stirring until just combined.
Drop 12 spoonfuls of cookie dough onto cookie sheet sprayed lightly with non-stick spray.
Bake at 350 degrees for 12 minutes.
Cool for one minute on pans and then transfer to cooling rack.
