CITRUS COURGETTE RIBBON SALAD

Ingredients
Juice & Zest of 1/2 lemon1/2 tbsp extra virgin olive oil2 small spring onions 1oz walnuts1 large baby courgettepinch of salt & freshly ground black pepper1/2 tbsp parsley
Directions
In a large bowl, whisk together the lemon zest and juice, oil, salad onions and walnuts.
Add the courgette ribbons, toss together and season with salt and freshly ground black pepper.
Serve on a plate, sprinkle with the parsley and garnish with the lemon
