Banana Spelt Muffins

Ingredients
1 large fresh Egg3/4 cup Butter, unsalted1/2 cup Milk, nonfat, or half and half1 tsp Cinnamon, ground1/2 Salt1 tsp Vanilla Extract3 medium (soft and ripe) Bananas (7" to 7-7/8" long) 1/2 cup Walnuts, pieces or chips 1 tsp Baking Powder1 tsp Baking Soda1/2 cup Brown Sugar, packed 1 1/2 cups Spelt, flour Do all the mixing in one bowl and start with the wet ingredients first.1 large egg and 3/4 cup soft unsalted butter, 1/2 cup brown sugar, and 3 soft bananas. Stir this mixture until most of the bananas are mixed into the batter.Add to the batter 1/2 cup milk or half and half, 1 tsp of vanilla extract, and 1 tsp ground cinnamon, mix well, then add 1/2 cup walnuts, 1 1/2 cup of spelt flour, 1 tsp baking powder, 1 tsp baking soda, 1/2 tsp salt. Mix again using a large spoon until all the ingredients are mixed in completely. About 3 minutes using a large spoon.Spoon batter into prepared greased muffin cups.Bake in preheated over for 18-20 minutes, until a toothpick inserted into center of muffin comes out clean.Best when served hot from the oven. Refrigerate any leftovers.
Directions
Serving Size: makes 6 large muffins per recipe

Preheat Oven to 375 degrees F.
Lightly grease 1 large muffin pan (6 muffin cups) with soft butter.

Cook for 18 to 20 minutes.
