Maine Pancake

Ingredients
2 large eggs, slightly beaten1/2 c. Flour1/2 c. skim milkpinch of saltpinch of ground nutmeg1 T. Butter
Directions
Must have a skillet that can go from stove top to oven.

Preheat oven to 425 degrees.

Whisk eggs, flour, milk, salt, and nutmeg together. Batter may be slightly lumpy, can be done the night before and refridgerated. Set mixture aside.

Melt butter in skillet over medium heat. When butter is melted pour egg mixture into skillet. Place skillet into oven and bake for 12-14 minutes until puffy and golden.

Serve immediately! Pancake will deflate shortly after baking.

Optional toppings: fresh cut up fruit, maple syrup, powdered sugar, whip topping, mini chocolate chips, chopped nuts, etc. Toppings will alter nutritional info.
