4 boneless, skinless, split chicken breasts1 can Rotel tomatoes with green chilies4 oz shredded part skim mozzarella cheese7 oz. can Salsa Verde (made with tomatillos)
Cut each chicken breast into 2 equal pieces and place into a baking dish sprayed with non-stick spray.
Pour Rotel tomatoes with green chilies & Salsa Verde over the chicken. Place in a 350* oven for 30 minutes.
Top chicken with cheese & serve with brown rice & black beans! Sauce from chicken can be poured over rice for a tasty Mexican rice!
