Shrimp & Bean Stir Fry

Ingredients
2 TBS Coconut oil1 clove garlic1 large slice red onion, chopped4 white mushrooms1.5 cups of raw shrimp1.5 cups fresh cabbage, shredded or chopped1 cup kale, chopped3/4 cup of black beans, drained and rinsed1 TBS Soy sauce2 TBS Apple Cider Vinegar1/4 cup water
Directions
1. Saute galic and onion in coconut oil until beggining to carmelize
2. Add mushrooms, saute about 3 mintues
3. Add Shrimp, cook until not opaque
4. Add cabbage, Kale, and black beans
5. Stir well
6. Add water, soy sauce and vinegar, stir well
7. Cover and let simmer with occasional stirring until cabbage is slightly softened (about 7 minutes)
8. Serve as is or over rice or noddles
