SUPER LEAN Wheat Pancakes

Ingredients
1/3 cup whole wheat flour1/4 tbsp baking powder heavy dash of cinnamon (or pumpkin pie spice)2 packets of Stevia in the Raw1/4 cup unsweetened almond milk (or regular milk)2 tbsp of egg whites (from carton)1/4 tsp vanilla extractPAM spray
Directions
Mix dry ingredients together (flour, baking powder, cinnamon, Stevia).

Mix in wet ingredients (milk, egg whites, and vanilla).

Mix batter well. If too stiff/dry, add a tiny splash of almond milk to get the right consistency.

Spray your skillet/pan with PAM generously. Head to medium heat. Use a 1/4 cup measuring cup for measuring. Do not fill the measuring cup for each serving. Just about 3/4 full. This will give you 3 tiny pancakes. If you'd like, just dump all this in pan for one large (normal sized) pancake.

Serving Size: Makes 3 small pancakes, 2 inches in diameter or 1 large pancake
