Curried Black-eyed Peas

Ingredients
One can black-eyed peas (15 oz) - drainedOne can diced tomatoes & chiles (10 oz) - undrained2-3 tsp curry powder (to taste)1 tsp minced onion (to taste)red pepper flakes (optional)
Directions
Dump cans of black-eyed peas and diced tomatoes & chiles into a saucepan. Add curry, onion and red-pepper to taste. Cook on medium heat for about 15 mins. Serve as a side dish or over rice as a main course.
