Powerhouse Breakfast Cookies

3/4 c. whole wheat pastry flour1/2 c. white flour1/2 tsp. baking soda1/2 tsp nutmeg1/2 tsp cinnamon2 tbsp butter. Butter is needed for cookie texture1/4 c. canola oil1/4 c. dark brown sugar3 tbsp white sugar1 egg1/4 c. jar baby food carrots 1 tsp. quality vanilla extract1/2 c. rolled oats (old fashioned)1/2 c. bran flakes1/4 c. raisans1/4 c. walnuts toasted
Most days I am out the house before my children even begin to wake up. Here is something I make ahead; partnered with fresh fruit, and a glass of milk; I know they are getting a balanced combo before the walk out.
Combine 1st 5 dry ingrediants well. Sit aside.
Cream butter, oil and sugars, and egg. Incorporate dry mix. Do not overbeat.
Add baby food, vanilla, oats, bran flakes, raisans, and walnuts. Stir just until combined.
Line baking sheet with wax paper. Use ice cream scooper to scoop 3 tbsps batter for each cookie. Use fingers to press flat. Makes 12 cookies.
