Mashed Root Vegetables

Ingredients
3 pounds assorted root vegetables, such as carrots, parsnips, turnips, and rutabaga, coarsely chopped2 cups pearl onions peeled3 garlic cloves4 cups chicken or beef broth fat free low sodium1.5 cups of fat free milk3 tablespoons light butter1/4 tsp fresh thyme1/2 tsp rosemary
Directions
Place all the vegetables, thyme, rosemary and garlic in a large pot and fill with cool chicken or beef broth to cover. Bring to boil over medium heat and simmer for about 30 minutes, until the vegetables are very tender.
Drain vegetables and put them into a large mixing bowl. Mash with a potato masher. Stir in the milk and butter and season with salt and pepper to taste. I used cajun seasoning for this part.
