1 Cup of Alexia Chipotle Roasted Sweet Potatos & Vegetables (Cook according to directions)3 oz cooked chicken - shredded or diced up1.5 cups shredded romaine lettuce1 small tomato diced2 tortilla chips - crumbles to sprinkle on top2Tbsp of Spicy Chipotle Aiolo Sauce(directions below)Spicy Chipotle Aiolo Sauce Ingredients3 tablespoons fat free mayonnaise3 tablespoons of non fat plain Greek Yogurt2 teaspoons chopped chipotle chiles in adobo1 teaspoon minced garlic1/2 teaspoon cumin4 teaspoons fresh lime juicesea salt & freshly ground black pepper, to tasteNutritional Info Fat: 0.0g Carbohydrates: 0.7g Calories:6.0 Protein: 0.3g Put all ingredients in a blender and blend until smooth.Transfer to a bowl or squeeze bottle, and refrigerate until needed.Serving Size: 3/4 cup or 12 Tbsp.
Cook Alexia Chipotle Roasted Sweet potatoes & Veggies according to direction. You can the left overs for lunch or in a tortilla shell!
On a large plate, add your lettuce, top with cooked veggies, tomato & then chicken, Aiolo Sauce and crumble two tortilla chips on top.
