Myra's Bean Salad

Ingredients
1 can each, rinsed and drained: White canali beans Black beans Chickpeas1 cup yellow sweet corn1 green pepper chopped1/2 yellow pepper chopped1/2 red pepper chopped1 red onion chopped1 cup chopped celery2 cup halved grape tomatos1 cup quartered baby portabello mushrooms4 tbs chopped fresh cilantro1/2 c Balsamic vinegar1/2 c splendasalt & pepper to taste
Directions
Mix dressing and set aside until all other ingredients are mixed.

Mix all beans and vegetables in a large plastic storage container. Add dressing and mix well. Let let overnight before serving.

Makes about 18-1/2 cup servings.

    I would have rated this recipe higher but for the splenda. Splenda is one molecule away from being chlorine bleach. It is not a food and should never end up in our bodies. I have no idea why you would need to put sugar in this recipe. It was good without it. - 7/10/11
