Organge-BBQ Cashew Chicken

olive oil cooking spray3/4 lb chicken breast, cut into bite-sized piecessalt and pepper1 red bell pepper, diced1/2 small onion, diced1 tsp minced garlic1-2 tsp ground ginger2 tbsp hoisin sauce2 tbsp orange marmalade1/2 tbsp Texas Pete1 tbsp tamari1/4 cup chicken stock3 tbsp cashews2 scallions, chopped
1. Heat skillet over medium high heat and spray with olive oil spray. Sprinkle chicken with salt and pepper. Add chicken when skillet is hot and cook until golden. Remove from heat.
2. Add onions, peppers, garlic, and ginger. Cook until vegetables are soft. Meanwhile, combine hoisin sauce, marmalade, Texas Pete, tamari, and chicken stock.
3. Add chicken back to the pan and toss with the sauce. Add the cashews and scallions and cook until the sauce begins to thicken. Serve with rice.
