Lentil Soup with Tocino

Ingredients
2 Tbsp. unsalted butter1 large onion, chopped1 1/2 cups chopped yellow bell pepper1 large carrot, chopped1 pound Tocino2 tsp. dried herbs de provence 2 cups red lentils4 cups Chicken Stock4 cups water
Directions
Melt butter in large pot over medium high heat. Add vegetables. Saute until begin to soften, about 8 minutes. Add pork and herbs. Cook and stir until no longer pink.

Add lentils, then stock and water. Bring to a boil. Reduce heat to medium low. Cover partially with lid. Simmer until meat is very tender and soup is creamy consistency, about 1 hour 10 minutes.

Serving Size: makes 5-6 servings about 2 cups each
