Zucchini Crisp you won't believe it isn't Apple

Ingredients
Zucchini Crisp8 Cups cubed zucchini (peeled and de-seeded) Small Cubes1 cup sugar1 Tps cinnamon2/3 cup lemon juiceCook above ingredients until zucchini is tender (doesn’t thicken)Crust4 cups flour2 cups sugar3 sticks margarine ( not spread)
Directions
Mix together- press ½ of the mixture in a 9x12 pan. Bake for 10 minutes or until Light Brown.
Pour zucchini and juice over crust and top with remaining mixture.
Bake for 35 minutes


Serving Size: Dish in approximate 12 scoops full.
