Garlic Pasta Primavera

5 oz pasta4/5 can no salt added diced tomatoes1 oz parmesan cheese, finely grated1 T olive oil1 T light butter 8 oz mushrooms, sliced1 green bell pepper, chopped1/4 red onion, chopped 3 cloves garlic, minced1 oz heavy cream1 oz fat free milksalt and pepperfresh basil, finely chopped
Cook pasta according to package directions; drain.
Meanwhile, heat oil and butter in skillet over medium low heat and add garlic and onion. Cook for about 1 minute, then add bell peppers and mushrooms. Saute till vegetables are tender. Combine cream, milk, and tomatoes together and add to skillet. Season with salt and pepper. Stir in parmesan. Allow parmesan to begin to melt. Add pasta and toss with spoon till cream sauce forms. Remove from skillet, top with basil and additional parmesan if desired.
Serving Size: Makes 2 generous portions, or 4 small portions
