Shrimp & Veg Scampi

Ingredients
1 1/2 lbs. shrimp, shelled and deveined 1/3 cup scallions - green only 2 large cloves garlic, minced 1/3 cup olive oil 2-3 tblsp butter 1 1/2 cups mushrooms, any kind you like 1 can artichoke hearts in water, cut up 2-3 tblsp seasoned flour (salt and pepper) 1 tblsp parsley 1 1/2 cups white wine 1/2 cup chicken broth 1/4 cup locatelle cheese, grated juice of 1/2 lemon 6 oz linguine, cooked aldente
Directions
Heat olive oil in a large saute pan, add garlic and scallions. Cook until garlic is very light brown. Coat shrimp with seasoned flour and parsley and add to saute pan. Cook approximately 3 minutes. Add artichoke hearts and mushrooms. Mix together well and cook another 3 minutes.
In a measuring cup add wine, lemon juice and chicken broth, pour over shrimp mixture. Cook until shrimp is pink, approximately 5 minutes. Add butter and heat until melted. In a large bowl add linguine. Pour shrimp scampi over linguine
and enjoy.
