New Orleans Dirty Rice

Ingredients
1.5 lb ground beef1.5 c brown rice1 large onion, chopped0.5 green pepper, chopped2 stalks celery, choppedSalt & Pepper to taste4c water6 bell peppers, halved1/2 c Italian bread crumbs
Directions
In large cast iron pot, brown beef with chopped vegetables. Add uncooked brown rice and add enough water or chicken broth to barely cover the ingredients. Cover and let simmer till rice is cooked and water is evaporated.

Halve whole bell peppers and add to boiling water,cooking about 20 minutes. Drain. Fill bell peppers with dirty rice, top with breadcrumbs, and bake at 350 for 30 minutes.
