Healthy Hearty Roast Beef Stew in Broth

Ingredients
3lb boneless Chuck shoulder roast1 medium onion, chopped or diced2 tbsp butter10 small carrots (5 1/2" long approx.), cut in half5 medium potatoes, quartered7-8 cups of water
Directions
Brown onions in butter (large & deep skillet). Add roast and brown on both sides. Add water to the skillet and cover. Approx. 30-40 minutes prior to finish, place peeled & cut potatoes & carrots into skillet. Simmer for approx 30 mins or until carrots and potatoes are done. Cut roast and serve as stew with broth.
