curried chick peas

Ingredients
1 can chickpeas2 small zucchini, chopped1 red pepper, chopped1/2 yellow pepper, chopped1 red onion, chopped1 whole, boneless, skinless chicken breast, chopped1 tsp brown sugar1 tbsp olive oil4 dried apricots, chopped4 prunes, chopped1 tsp curry powder1/2 tsp tandoori powder1 1/2 cup waterpinch of salt
Directions
Heat oil in a skillet, add curry & tandoori powders and all chopped fruit & veggies. Cook 2 mins and add chicken. Cook, stirring frequently 4-5 mins. Add water, sugar and pinch of salt and let simmer until chicken is fully cooked. If you prefer a thicker sauce add a tsp of corn starch towards the end of the cooking.

Cook time varies according to how finely you have chopped the vegetables and chicken.
