Ingredients
Slice zucchini into 1/8 inch pieces.Beat eggs in a bowl.In separate bowl, combine breadcrumbs, cheese, and salt and pepper to taste.Heat olive oil in pan on medium. Dip zucchini into egg mix, then coat with breadcrumbs. Put into oil and flip after 2 min or when turning golden brown. Let dry on plate with papertowel.
