Ingredients
Ingredients:Beans, pinto, 1 cup Red Ripe Tomatoes, 2 tomato Cucumber (with peel), 1 cucumber (8-1/4")Onions, raw, 1 medium (2-1/2" dia)Garlic, 1 clove *Extra Virgin Olive Oil, 4 tbsp*Lemon Juice, 1 lemon yields
Directions
Soak dry beans overnight or use canned beans. Add beans to salad bowl; cut tomatoes, cucumbers and onions and add to salad bowl. Finely chop garlic; add lemon juice and olive oil; stir and add to salad. Mix to coat. Serve
