Satay Fish Curry

Ingredients
Satay Sauce - Ayam (71g=1 serve), 4 serving Lite coconut milk Thai kitchen, 1.6 cup Potato, raw, 3 small (1-3/4" to 2-1/2" dia.) Mushrooms, fresh, 1.5 medium Carrots, raw, 1 small (5-1/2" long) Green Beans (snap), 6 beans (4" long)Bok Choy, raw-shreaded, 1 cup Onions, raw, 1 medium (2-1/2" dia) Haddock (fish), 1 fillet Olive Oil, 2 1tsp
Directions
Fry onion in olive oil. Add satay sauce, then coconut milk. Simmer chunks of potatoes in the sauce. When semi soft (about 5 mins, add diced carrots fish, bok choy , beans and mushrooms. Simmer until flavours are released (5-10min)
