Cheesy ranch rice

Ingredients
1/2 C uncooked brown instant rice (makes 1 cup cooked)1 serving of ranch powder dip mix1 oz light velveeta cheesewhatever veggies you want (I used broccoli and carrots)You can also add chicken (Not included in nutrition info)
Directions
Cook rice according to instructions, but add ranch powder to water before cooking. Add velveeta and veggies and microwave for 1 minute or so to melt cheese. Enjoy!

Serving Size: Makes one bowl of rice (about 1.5 cups including veggies)

    I am new to making healthier versions of my favorite foods and this recipe beat my rice out of the ball park! I am eating it right now with some chopped broccoli and it is amazing! I also like how brown rice has a bit more texture than white, plus its better for you. - 3/28/13
