Turkey Meatloaf Muffins

Ingredients
2 lbs ground turkey3 egg whites1 cup quick cooking oats1/2 tsp ground cumin1/2 tsp dried thyme2 tsp dry mustard2 tsp black pepper2 tsp chipotle pepper spice / chili powder1 tsp salt2 tbsp garlic powder or 2 cloves minced1 small onion - finely chopped2 celery stalks - finely chopped
Directions
Prehead oven to 375 degrees.
Spray muffin pan with olive oil.
Mix all ingredients together in large bowl.
Roll mixture into racquetball sized balls and place in muffin pan.
Bake for 40 minutes.

Serving Size: Women - 2 muffins / Men - 4 muffins

Work great as meatballs for spaghetti!
