Pumpkin Protein Bars

1/2 cup Xylitol Brown Sugar Blend (Ideal)1 - 4 oz jar baby food applesauce2 tsp ground cinnamon1 1/2 tsp ground ginger1/2 tsp ground clove1 tsp baking powder1 tsp baking soda1/2 tsp salt2 tsp vanilla extract4 large egg whites1 - 15 oz can raw pumpkin2 cups oat flour (oats in food processor work)2 scoops vanilla whey protein 1/2 cup almond or coconut milk1/2 cup chopped walnuts (optional)
Preheat oven to 350 degrees.
Spray 9x13 Pyrex with non-stick spray.
Combine all ingredients - except oat flour, whey protein, milk and walnuts - and mix well.
Add final ingredients and mix until incorporated.
Spread batter in dish and bake for 30 min.
Keep in refrigerator about a week.
Serving Size: Makes 24 squares
