Chicken Salad Wraps

Ingredients
2 cups cooked chicken, cut into small pieces1/2 cup celery, diced1 cup red apple, diced1/2 cup seadless grapes, halved1oz walnuts, chopped1tsp parsley, chopped2 tbsp Light Mayo3 tbsp lemon juicesalt and pepper to taste8Romaine lettuce leaves
Directions
Combine 1 tsp lemon juice and apples, mix thoroughly. Add chicken, celery, grapes, and walnuts. Mix gently.

In another small bowl, combine the remaining lemon juice, mayo and parsley with a pinch of salt and pepper to taste.

Stir together and add chicken salad mixture and combine. Place 1/2 cup into a lettuce leaf and serve.

Serving Size: 2 leaves, each with 1/2 cup chicken salad
